Molino San Juan (1890) is the living testimony of the culture of “wheat milling” to produce flour. We offer the elaboration of ancestral recipes from wheat flour. It is a cooking class that rescues the history of the heritage gastronomy of northern Ecuador. The tasting is combined with milk delicacy and leaf cheese, made at the hacienda, and chuspa coffee.
